But clearly, I’m on a holiday kick as today I am sharing a cocktail recipe for your holiday or NYE festivities along with a really huge giveaway.

First things first, I’m not a big holiday cocktail person. I mean clearly, I’m not a cocktail person currently and I won’t be until I finish breastfeeding, but back in the day I wasn’t keen on the holiday ones. I don’t love spiced drinks or even eggnog for that matter. *please ignore forgive me if you love it!*

This Texas girl loves her limes and margaritas, so I thought it would be fun to share a lime-champagne cocktail on the blog today that might seem a bit summery, but I promise it works for NYE, too! Let me introduce you to Champagne Mojitos! 😉

The first time I ever had a mojito I was with Paul and let me be frank, they were terrible. The mint was SO muddled that it felt like I was drinking orange juice with extra pulp. It was as if I’d eaten 15 mints and had a terrible stomach ache after just a few sips. We always joke about how bad the mojitos were at that restaurant and I think it took me a year to ever try one ever again. But once I had a proper one, I loved how refreshing and light they were. Something holiday cocktails aren’t always known for being.

I wanted to transition this cocktail into the holiday season, so what better way to do that than with bubbles? Here’s how to make it!

Ingredients:

3/4 Cup Sugar

3/4 Cup Water

1 Cup of Mint Leaves, Plus Mint For Garnish

6 Limes

2 Cups Light Rum

Ice

3 Cups Champagne

Instructions:

In saucepan stir together sugar and water on high until sugar dissolves. In pitcher combine mint, sugar syrup and lime. Muddle with wooden spoon. Add rum and stir. Fill flutes with ice and rum mixture 2/3 full. Top with champagne, lime wedge and mint! And if you’re wondering “is champagne suited to a wine fridge?” Yes, you can use any type of wine cooler for your champagne.

  5. So cute! Your first experience with a Mojito reminded me of my husband when he was a bartender in a VERY busy bar in college. Mojitos were a HUGE pain to make and if one person ordered one – EVERYONE would order them. So, they would make them super minty and sweet to discourage people from ordering them. He was young…
