After a week of vacation food this post is necessary. 😉 {I desperately need a vegetable. ha!}

To word it nicely, I was never a kids’ camp person. I cried myself to sleep in my bunk missing my mom. I thought it was so odd a stranger was going to dictate my schedule for a week of fun {YIKES- can you tell I was a first born or what?! lol}. And my camp counselors always thought I needed to go to the nurses’ cabin because I wouldn’t eat breakfast.

In fact, I remember one church camp where I fell asleep during the church service at night because I had stayed up all night the night prior crying for my mom. I was a solid 35 minutes away from my parents’ house and was only at camp for 7 days. I was a clingy child and I accept that title.

But back to the breakfast situation, the only time I’ve ever really liked breakfast was pregnancy. I mean, I LOVED it then. I’d chomp down on chocolate chip Eggo waffles knowing my morning sickness would kick in come 11 am, so I had a few hours to devour all the chocolate my heart could handle. And yet I lived in a delusional hormonal state that I was *so* healthy during my pregnancy. If a gallon of chocolate milk every two days is healthy, I mean call me a pinnacle of pregnancy wellness, my friend. 😉

I don’t really get hungry until noon {I’m a major afternoon eater!}, but I need something in my stomach to keep up with my daughter. Otherwise, we’ll go to the park, and I’ll come home around noon so famished I feel like I could pass out! Some mornings I crave toast, but I have found the best way for me to get nutrients in the morning is a smoothie. And this is a smoothie I actually crave in the mornings, it’s not a green juice you’ve got to scarf down! It tastes like a creamy dessert, but it’s filled with greens. Let’s break down how I make it!

Katey’s Green Smoothie

  • 1.5 Cups Organic Power Greens {Baby Chard, Kale, Spinach}- I get this lettuce mix at Costco, but I see it at every grocery store!
  • 1 Organic Pear
  • 1/2 Banana
  • 1/2 Cup Frozen Avocado- I get this at Costco!
  • 1 Cup Oat Milk
  • 1 Tablespoon of Almond Butter
  • 4 Ice Cubs

Depending upon the time of year or needs, I’ll add extra things!

  1. If I know I have a busy morning and can’t eat lunch until much later, I add a tablespoon of chia seeds, too.
  2. If I need extra energy that day, I’ll add in a dropper of liquid Chlorophyl-this is liquid sunshine and full of vitamins!.
  3. Struggling with allergies? I’ll only do half a pear and then add in a 2 Teaspoons of Manuka Honey.
  4. If I’m trying to detox from a sugar-fueled weekend, I squeeze in half a lemon to my smoothie.

Blend until smooth and enjoy! 

Maxi also loves this smoothie and sometimes I’ll add in plain greek yogurt for her for extra protein, too! Pears are FILLED with fiber, so even if I don’t have greek yogurt in the smoothie, this keeps me full for hours.

    Definitely understand you not liking camp! As a child, you could not have PAID my diva self to go to summer camp. I must have thought I was Paris Hilton 2.0 because there was no way I was sleeping in a cabin, swimming in a lake and doing outdoorsy things. ??? I was a mess. Even today I tell my husband that I’m “allergic” to lakes and will only swim in a pool or the ocean (as if it’s any better). And I only “hike” on paved trails- there will be no snake run-ins for me!

    I begged my parents to let me go to camp because all of my friends went – and when they finally let me go, I hated it!!! I hated sleeping in cabins and realized I very quickly wasn’t much of an outdoorsy person. The first night they found some creatures in our cabin and after that I was done ?.

    I went to church camp only once. Cried the whole day before because I didn’t want to go. I admit I had a good time. But I was the only kid that didn’t receive any mail from home that week. Everyone else got letters and post cards. I got nothing. Later my mom told me it was because she was afraid a letter from home would upset me more. I still give her a hard time about it! Ha!

    Keep in mind this church camp was less than an hour away from my house. #homebody

    I sent mail home everyday and on day three I had called home so much and spent more time in the nurses office my parents gave up and just drove the four hours to get me. I beat my own mail home. So yes, we are completely normal! ??
