Want to make my Nana’s Strawberry Pie for the 4th of July?! This is a pie that my Nana always makes and it is one that I devour during those hot and humid months of summer. It’s perfect for your 4th celebrations not only as it fits your tablescape, but it’s the best balance of being sweet and still light! Oh and did I mention it’s easy to make?!

Before we talk about the recipe, let’s talk about outfits for the 4th!

  • I’ve got two red, white, and blue dresses that I have to share! First up, this red check dress is worn by both my sister and me in this post. It runs a little large, and we are wearing the XS. I have a white tank under mine to show you how you can style it that way and my sister doesn’t have a tank under. Or, if you want a hi-low option, there is the blue star dress for you. I have on the S/M and belted it at the waist. However, you totally don’t have to belt it if you were to wear your swimsuit under your 4th look if you are having a pool party. I love it as a cover-up option, too.
  • For your jewelry, my red heart necklace is Lo Jewels. These are my bangles in a size medium. Here are my festive star earrings.
  • Here is a similar option to my blue sandals you can wear! I love these in white.
  • Don’t forget a red lip! Ours is Sephora Liquid Lipstick in 01.
  • Maxi’s little bubble outfit is courtesy of Jo Jo Mommy and her red and white gingham dress is Smocked Auctions.
  • Paul’s shirt is Mizzen and Main. No shocker there. 😉 He is wearing this shirt in large trim fit.
  • We can’t forget to dress your table. The tableware is the Royal Check Collection from MacKenzie Childs! Isn’t it dreamy?! I love blue and white {hence my ginger jar obsession} so this fits in perfectly for summer. I have quite a kitchen update to update you all on, but keep waiting until I’ve made more selections before I bore you with minor details. ha. But this blue and white is going to go so pretty with our new countertops I can hardly stand it.

Let’s get to the main course of the post, dessert!

Nana’s Strawberry Pie

You can also make this with fresh peaches if you prefer peach pie! 

Ingredients

  • Pie Shell {You can make your favorite recipe, but I cheat and just get one from the store. It’s summer. Don’t be sweating in the kitchen! 😉 }
  • 3 Cups Sliced Strawberries
  • 1 Cup Sugar
  • 3 TBS. Cornstarch
  • 1/4 TSP. Salt
  • 3/4 Cup Water
  • 1 TSP Lemon Juice
  • 3 TBSP Strawberry Jello {Or you would use peach jello if you are making this a peach pie.}
  • Whipped Cream {Whip your own or use Reddi Whip.}
  • Sliced Strawberries or Blueberries for Topping

Instructions

  1. Bake your 9″ pie shell and place on a rack to cool. Once cooled, fill the shell with the sliced strawberries.
  2. Mix sugar, cornstarch, salt, water, and lemon juice in a saucepan on low. You want to heat this until it is thick. Stir in the 3 TBSP of strawberry jello. I let it thicken up a bit, then I pour this mixture over the fruit in the pie shell and cool.
  3. I will make this pie overnight and let it sit overnight in the fridge with the mixture. But it doesn’t have to cool overnight.
  4. When ready to serve, you can use ready-to-use whipped cream as I did on one of the pies and let the strawberries show through in the middle. Or, I used homemade whipped cream on the “American Flag” pie. Then I assembled blueberries and sliced strawberries like a flag to make it festive for the holiday.

Note: I’ve made this recipe with multiple pies at once and doubled it. But just make sure your cornstarch recipe is thick when you pour over strawberries. Sometimes I’ll eyeball it and use less so that the filling isn’t overflowing. Just play around with it to see how much filling you prefer with your strawberries. 🙂
